A tablescape of chai and various ingredients used to make it.

Masala chai brewing guide

Asli (authentic) chai is best when cooked on the stove, and not steeped in a cup. CTC tea from Assam boasts a stronger bolder flavor that is ideal for chai and is balanced with milk and a sweetener of choice. We know life gets busy, and we know you know that a good cup of chai is worth the bit of time it takes to make. It’s a ritual in South Asian homes, and we invite you to partake in it with us. Enjoy the process, take this time to be present with the pot, breathe in the spices. You may even find it meditative or restorative.

Items you need:
- small pot
- spoon or ladle
- strainer

asli recipe

1. In a small pot, heat 1 cup water and sweetener of choice (3 tsp sugar recommended) on medium-high heat until nearly boiling. For extra flavor, grate fresh ginger into the pot

2. Add 2 tsp chai blend and 1/2 cup milk (whole milk recommended)

3. Stir occasionally and allow chai to boil until it rises to the top 1-2 times. Be careful not to let it spill over! Brew until chai is a rich opaque tan color, then strain into cup and enjoy

Dairy-free chai

For alternative milks that use water as a base, such as oat milk, follow these directions!

2. Add 2 tsp chai blend

3. Stir occasionally and allow chai to boil until it rises to the top 1-2 times. Be careful not to let it spill over! Brew until chai is a rich opaque tan color, then strain into cup and enjoy

Notes and tips

- The longer the brew, the stronger the flavor and thicker the chai.
-  If you like a stronger or weaker chai flavor, adjust the blend amount
- If you like a thinner or thicker chai consistency, adjust the water-to-milk ratio
- Alternative sweeteners to try: condensed milk, jaggery
- Spices settle, so feel free to shake it up before brewing
- Store in a cool, airtight container
